Analizzando il comportamento della clientela, le dinamiche di mercato e il contesto competitivo, l’impresa di ristorazione può definire la struttura dei prezzi adeguata al raggiungimento degli obiettivi economici e al controllo dei costi. Come si può dedurre si tratta di un’attività complessa e strategica, che richiede un approccio integrato e multidimensionale.”

“Ricordiamoci che il profitto è dato dalla differenza fra ricavi e costi.
Dunque, per aumentare il profitto (o almeno mantenerlo constante) senza alzare i prezzi è necessario massimizzare le vendite in modo che si possano realizzare ricavi maggiori. Questo è un aspetto sottovalutato nella gestione delle aziende ristorative. Ci concentriamo su risparmiare, su come preparare dei piatti che ci costino poco, cercando di acquistare dai fornitori che ci propongono dei prezzi bassi, compromettendo in questo modo la qualità delle nostre pietanze.
Dobbiamo focalizzarci anche sull’altra componente dell’equazione del profitto: ridurre i costi ma anche incrementare i ricavi. Uno dei metodi efficaci per aumentare i ricavi è l’adozione del Revenue Management. Le compagnie aeree e alberghiere l’hanno capito da tempo. Nel settore della ristorazione, tuttavia, se ne discute molto ma le azioni concrete sono limitate.”
